Best Lemon Pie – Best and Easiest Ever

Now then, I will say that this isn’t going to be the best recipe for RVing, but given that it requires 1 piece of kitchen equipment (2 if you make your own crust) and takes less than 1 hour to make….I still think it is a winner for the RVer.

It does require a blender or food processor, which in turn would most likely require electricity.  So please read through the recipe before your embark up on this pie baking journey.




Anyway – this pie is fabulous.  Today I made the crust right in the pie pan – no need to dirty another dish!  I used the blender today and it was definitely smoother than the food processor.  But either is fine.  And – I made it today and totally forgot the butter!  It still turned out okay whew!

It is amazing!  Enjoy.

This was given to me by new friend and I didn’t believe the recipe.  When you make it, don’t tell anyone how and wait until they taste it.  I’m sending you the recipe exactly as it was given to me, but then I’m putting in a couple of comments.

Best Lemon Pie

Put in Blender or Food Processor

  • 4 eggs
  • 1 whole lemon (ends cut off) rind, seeds, and all
  • 1/2 cup (1 stick) unsalted butter (I didn’t soften mine and it didn’t seem to make a difference)
  • 1 ½ cups sugar
  • 1 teaspoon vanilla

Blend until smooth.  Pour into unbaked pie shell (below) and bake at 350° for 40 minutes (I baked it for exactly 40 minutes and it was perfect)  Serve with raspberries or raspberry sorbet (or just plain!)  You could probably add a meringue if you wanted or just dust it with powdered sugar (like a lemon bar).  OMG soooo good!

One Pan Pie Crust

  • 1 ½ cups flour
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • ½ cup canola oil
  • 2 tablespoons milk

Mix and press into pie pan.  (For pre-baked crust, bake at 375 for 20 minutes)




NOTES:  This is WONDERFUL.  I do think that I would pick out a few seeds from the lemon if you can. Just because they didn’t blend that well.  I used my food processor and there were still tiny bits of rind in the mix, but it doesn’t hurt the taste.  Next time I’m going to try the blender to see if it gets smoother.  My lemons were small so I used 1 ½ lemons but I think that’s just to taste.  The pie crust is awesome – its flakey and almost like a shortbread.  Stupid easy!!!
